There’s nothing more comforting than a warm bowl of meaty and cheesy pasta.🍝
This warm and hearty pasta dish features a vegan “meat” sauce which can be made with a vegan ground beef substitute (ex. Soy-based crumble) or ground beef.
This dish makes 3 servings and can be ready on the table in less than 30 minutes. Serve it over a whole grain pasta and you’ve got a great meal!
1️⃣ Heat 1 Tbsp of olive oil in a large pan over medium heat. Add 2 cloves of garlic and 1/2 of a chopped onion, stirring until vegetables begin to soften (~3 minutes).
2️⃣ Add 1 cup of chopped mushrooms and 1/2 of a chopped zucchini, stirring until softened (~2 minutes). Increase heat to high and add vegetarian ground round or ground beef; cook, stirring occasionally until warmed through (~2 minutes).
3️⃣ Add 2 cups of tomato sauce to pan; bring to a boil. Reduce heat to medium-low; stir in 1/2 Tbsp Italian seasoning, 1/4 tsp red pepper, 1/4 tsp salt, and 1/4 tsp black pepper. Adjust seasoning to taste. Cover, and simmer (~15 minutes).
4️⃣ Fill 3 bowls with 2 ounces of pasta of your choice (I used brown rice penne pasta), and top with about ¾ cup of sauce. Top each serving fresh basil and a sprinkle of cheese, if desired. Enjoy!
