If you’re looking for quick and simple weeknight meal ideas, stir fry recipes are the way to go! 🥡 This tofu, zucchini, and edamame stir fry was so easy to prepare, and it left me feeling very satisfied. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
★ ½ package (~7 oz) extra-firm tofu
★ ½ medium zucchini
★ 1 green onion
★ 2 Tbsp soy sauce
★ 1 tsp fresh ginger
★ ½ garlic clove
★ 1 tsp garlic powder
★ 1 tsp ginger powder
★ ½ Tbsp cornstarch
★ ½ Tbsp black sesame seeds
★ ¼ cup shelled edamame
★ 2 tsp olive oil
★ salt & pepper to taste
1️⃣ Finely mince the fresh ginger and garlic. Cut zucchini into ¼-inch thick triangles and thinly slice the green onions.
2️⃣ Pat the tofu with paper towels and cut into 1-inch pieces. Sprinkle with ground garlic powder, ginger powder, and season with salt & pepper. Set aside.
3️⃣ To prepare the sauce, whisk together the soy sauce, fresh garlic, fresh ginger, cornstarch, and ¼ cup of water. Set aside.
4️⃣ Heat a non-stick pan over medium-high heat. Add 1 tsp of oil and zucchini. Cook until tender (~4-5 min), and once cooked, transfer to a plate and set aside.
5️⃣ Add 1 tsp of oil to the same pan, then the tofu. Sauté the tofu, stirring every minute or so until golden-brown on all sides (~8-10 min).
6️⃣ Reduce heat to medium and add the prepared sauce, zucchini, and edamame to the pan with the tofu. Cook, stirring until everything is coated and sauce is thickened (~2-3 min).
7️⃣ Serve the tofu and vegetables over the grain of your choice (ex. brown rice, jasmine rice, quinoa, soba noodles, rice noodles, etc.). Top with green onion slices and sesame seeds.

✨FYI: You can use a variety of vegetables depending on what you have on hand. Cauliflower, broccoli, bell peppers, spinach, brussels sprouts, or mushrooms would all be great choices.
