These homemade fresh rice paper rolls are healthy, colourful, and make for a delicious light dinner, lunch, or appetizer. 🙌🏼 They can be meal prepped ahead of time and completely customized depending on your preference.
I filled my rice paper wraps with cucumbers, carrots, avocado, cilantro, red peppers, pan-fried tofu, and rice noodles, and served them with a homemade peanut dipping sauce! 😋
To make a simple peanut sauce at home, all you need is 1/2 cup creamy peanut butter, 2 Tbsp soy sauce or tamari, 1 Tbsp maple syrup, 1 tsp chili garlic sauce or sriracha, 2 Tbsp lime juice, and ~1/4 cup water to thin the sauce. Whisk everything together, and you’ll have the perfect dip or dressing for rice paper rolls, spring rolls, Pad Thai, salads, and more!
✨TIP: Prepare everything before you start rolling. Once wet, rice paper is sticky and delicate so working quickly is crucial.
