Happy (Canadian) Thanksgiving everyone! 🍁

Although things may look different this year, at least we can be thankful for our health, family, friends, and some great food this long weekend. 🙏🏼 This 𝙫𝙚𝙜𝙖𝙣 𝙩𝙤𝙢𝙖𝙩𝙤 & 𝙧𝙤𝙖𝙨𝙩𝙚𝙙 𝙫𝙚𝙜𝙚𝙩𝙖𝙗𝙡𝙚 𝙧𝙞𝙨𝙤𝙩𝙩𝙤 made the perfect side dish for my family’s Thanksgiving dinner last night! It was seriously bursting with flavour and tasted even more delicious the ing day (today).

I prepared this dish using traderjoes chickpea and red lentil risoni, which I picked up before making my most recent trip back to Toronto from Buffalo. Similar products can be found by the brand explorecuisine at Walmart, Real Canadian Superstore, or Whole Foods. Although I opted for a rice-substitute in this recipe, feel free to use traditional risotto rice such as arborio, carnaroli, or vialone nano.

THE ROASTED VEGGIES 🍅
1️⃣ Preheat the oven to 375°F and chop 1 orange bell pepper, 1 large zucchini, and 2 cups of cherry tomatoes into small pieces.
2️⃣ Spread the veggies out onto a parchment-lined baking sheet, drizzle them with 1 Tbsp olive oil, and sprinkle them with some paprika, garlic powder, black pepper, and salt.
3️⃣ Roast the veggies in the oven for 30-40 minutes.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
THE RISOTTO 🍚
4️⃣ While the veggies are in the oven, sautée 1 medium red onion and 4 garlic cloves with 1 Tbsp olive oil in a large rimmed pan over medium heat for a few minutes.
5️⃣ Stir in 1 box of chickpea and/or lentil risoni (300g or about 2 cups), 1.5 Tbsp balsamic vinegar, and 4 Tbsp tomato paste.
6️⃣ Slowly add 4.5 cups of vegetable stock to the pan, 1/2 cup at a time. Allow each amount to be absorbed by the risoni before adding the next.
7️⃣ After 20 minutes, add in ~8 chopped sun-dried tomatoes and the roasted vegetables. Stir everything, and cook for another 5 minutes until everything is cooked through.
8️⃣ Remove from the heat and stir in a small bunch of fresh basil, 3-4 Tbsp nutritional yeast (optional), and salt and pepper to taste.

Make sure to serve this risotto immediately, and top it with some extra nutritional yeast and basil if you’d like. Enjoy!😋
